Choosing a Capacity From the Line-up

Capacity is one input, not the whole decision. Start with the volume of preparation your team expects to move, then check the equipment the manufacturer requires for that product.

A larger listed capacity may suit heavier throughput, though it can also require a specific compatible setup and planned storage. Size on its own is not the deciding factor.

Use the filters to compare what is in the line-up now. Send the product under consideration together with your current equipment details, and compatibility and availability are verified before you commit.

Map the pace of the kitchen before comparing sizes. Note preparations per hour during ordinary service, the peak expected on the busiest date, and the number of stations involved. Then mark where a pause is possible. This shows whether fewer interruptions, compact handling or flexibility between stations matters most.

Run an equipment check for every candidate. Record the exact regulator, connector and siphon models, and match them to current manufacturer information for the listed product. A move to a larger format may require a different approved setup. A thread that appears to engage is not a substitute for documented compatibility.

Review logistics with the same care. Confirm secure storage, ventilation, the route from receiving to the bench and the staff authorised to handle the item. A high-capacity choice can lose its practical advantage if the workspace cannot store or move it as required.

Score the options against workload, compatible equipment, storage, receiving and current stock. Keep that comparison with the order note and revisit it when service volume changes.
